Baked Lemon Butter Chicken
This easy baked Lemon Butter Chicken is to die for. It is easy, doesn’t take a lot of time or preparation, and best of all- inexpensive! What mom isn’t looking for a change up on the same old protein we eat 2-3 times a week? I know I was looking for new ways to spice up my usual chicken dinners.
This bake lemon butter chicken requires very few ingredients:
Boneless skin-less chicken breasts
2 whole lemons
1/2 stick of butter
salt and pepper to season
parsley flakes for color
So, here’s the thing…. this isn’t exactly the most healthy way to eat baked chicken… while yes, we are baking the chicken breasts, you are baking them in a lot of butter. I LOVE butter. So if you’re a dairy free family, you could substitute with dairy free butter – or possibly even olive oil (but I don’t know for sure as I’ve yet to try those options).
This meal is fairly inexpensive, and as a working mom on a budget, that’s always an important factor for me! I was able to get my chicken for less than $3 for two chicken breasts at Aldi (my favorite grocery store), I always have butter in the house, and lemons were less than $1 for 2. I also served this baked lemon butter chicken with a side of steamed asparagus, which I purchased frozen, at Aldi for $1.99 a bag. The entire meal cost me $6.00 to feed my family. Now, I have two young children, and my two children an I spit one boneless, skin-less chicken breast and my husband eats one boneless, skin-less chicken breast, so I realize this may not work in a couple of years, but for now, it’s incredibly affordable and everyone loved it!
Trim the fat from your boneless, skin-less chicken breasts
Season the chicken breasts with salt and pepper
Melt half a stick of butter in a bowl. Then cut one lemon into halves and squeeze the juice out of the lemon into the bowl. Mix well.
Place the boneless skin-less chicken breasts into a baking dish (I used a glass Pyrex container) and pour the butter and lemon juice mixture over the chicken breasts. Then sprinkle parsley flakes over the top of the chicken and butter mixture. At this point, for additional flavoring and also to make it look pretty, I added slices of lemon around the chicken.
Cover the chicken with aluminum foil and bake at 350º until the done. Make sure your chicken is at least 165º before serving.
