Cheater Homemade Cinnamon Rolls

Have you ever bought the refrigerated Cinnamon Rolls from the grocery store before, (I’m sure they’re a staple in all your homes like they were ours), and thought, “I could probably make these?”? Well, I have.  And then I looked into making the dough from scratch, and let me tell you – that looked exhausting.  While I appreciate truly homemade food, I also appreciate not spending 6 hours on making breakfast each morning – and it’s always considered a bonus in my book if the recipes are kid friendly (meaning my kids can easily help me make the food) because my kids love to help me cook.

So, I set out to make cheater homemade Cinnamon Rolls.  I knew that I would be able to find a mouthwatering, delicious, yet easy at home recipe for these wonderful pastries. I’ve come up with what I think is the perfect, cheater homemade Cinnamon Roll.  I’m sure from my other posts, you’ve started to notice a trend here- I love good food, but I also love anything that’s easy to make.  I adore this Cinnamon Roll recipe I came up with for more than one reason- one being that they’re truly delicious, but also that my children love to help me cook or bake.  So this recipe is perfect because it’s relatively simple, yet fun for the kids to help with.

So here’s what you’ll need from the grocery store: 1 can of refrigerated biscuits, butter, brown sugar, cinnamon, flour, cream cheese, powered sugar, vanilla, and a rolling pin if you don’t already own one.

Set the butter and cream cheese out so that they’re room temperature.

Step one – roll the dough out with the rolling pin so that it’s nice and even.  This is my favorite part to have the kids help with – it’s easy for them, but still messy with the flour all over the counter.

Step two – melt half a stick of butter in the microwave in a microwave safe dish.  Then add 1 tsp of cinnamon, 2 tbsp of brown sugar to the melted butter and mix together.  You want it to be a thick consistency.  (see picture)

Step three- coat the dough with the cinnamon butter mixture, spread into an even coating.

Step four – Roll the dough tightly, yet even.

Step five – cut the dough into individual Cinnamon Rolls. Then place on baking sheet, and bake in oven at 350º until edges are golden brown.

Now, for my favorite part – the homemade icing!

Use 1 block of softened cream cheese, 2 tbsp powered sugar, 1tsp milk, and 1tsp of vanilla, and mix together. Then coat the fresh from the oven cinnamon rolls with the icing. This will hep the icing get to that obnoxiously delicious gooey consistency that everyone knows and loves.
